Stuffed Savory Waffles with Danger Guac

1 C almond flour
1/2 C walnut flour (ground walnuts or use an extra 1/2 C almond flour)
1 clove crushed garlic
1/4 small onion minced
3 eggs
1/4 C coconut  milk or non-dairy milk of your choice
2 Tbls coconut oil
1 tsp coarse sea salt
1/2 tsp pepper

Combine all ingredients in a bowl and mix thoroughly. Waffles turn out best when waffle iron is oiled and preheated. This recipe will make 2 large waffles. Cook until golden brown. Slice waffle triangles in half and stuff with your favorite guacamole. Mine is usually chunky and contains tomato, onion, jalepeno, lime, salt, pepper and any other fresh veggies I feel like adding. Or, try it with my pineapple guacamole!  Who says waffles have to be sweet? Enjoy!SONY DSC
