I have always wanted to make a flaky salmon burger to add some diversity to the same old baked salmon I make time and time again. I found this lovely recipe for gluten free salmon burgers complimented by a green goddess sauce at http://www.eatingwell.com. The green goddess sauce looked so yummy but called for mayo and sour cream. I couldn’t, however, make these flaky salmon cakes without attempting my own dairy free version. Here’s what I came up with.
Green Goddess Goodness for the lactose intolerant goddess
2 ripe avocados
1 clove garlic
juice from 1/2 lime
2 Tbls fresh chopped cilantro
4 Tbls thick cream from chilled can of full fat coconut milk
1-2 tsp salt to taste
Combine all ingredients in food processor and pulse until creamy. The sauce should be slightly stiff and silky. Try this as a dip for your veggies too!

Add 2 cloves crushed garlic and 4-5 Tbls EVOO to a sauce pan. Simmer until garlic is browned, salt to taste and serve with freshly steamed organic artichokes.
