Super Moist Chocolate Chocolate Cookies (GF, CF, refined sugar free, contains eggs)
My chocolate cookies were good but after a few batches I finally discovered the secret moistening ingredient. Applesauce! This batch makes 4-6 cookies depending on the size. You won’t be disappointed!
1/2 C almond flour
1/4 C cocoa
1/4 C turbinado sugar
1/2 tea corn free baking powder
1 1/2 Tbls coconut oil
1/4 C sun butter or other nut butter
1/4 tea salt
1 Tbls applesauce
1/4 C gluten free chocolate chips or chopped GF chocolate bar of your choice
Mix together sugar, coconut oil, egg, sun butter and applesauce on medium speed until combined then mix in remaining ingredients adding the chocolate pieces last. Form into balls and flatten into cookie shaped mounds on an oiled cookie sheet. These cookies will rise a bit so flattening them is key. Bake for 15-20 min or until they are just beginning to crisp around the edges. They will feel slightly firm in the middle.
