Savory Waffles Stuffed with an Arugula Leek Scramble
Topped with Creamy Red Pepper Sauce

You will need:

1 batch gluten free, grain free savory waffles
1 arugula and leek egg scramble
1 batch creamy goat cheese and red pepper sauce


Egg Scramble:

1 whole leek, chopped and thoroughly rinsed to rid of any sediment
1 red pepper diced
a handful of washed and dried arugula
6 farm fresh responsibly farmed eggs
olive oil
salt and pepper to taste


Saute leeks and red peppers in olive oil until soft and beginning to brown, about 20 min or so. Stir often. Add salt and pepper to taste. Remove from pan. Heat another 2 -3 Tbls of olive oil and proceed with cooking 6 beaten eggs. When eggs are close to being done, add leek and pepper mixture  back into pan and remove from heat. Eggs will continue to cook as you combine the saute and eggs. Add arugula last and lightly toss into scramble.



Roasted red pepper, goat cheese sauce:

5 oz plain soft goat cheese
1 red pepper
1/4 C coconut milk or non-dairy milk of your choice
olive oil
salt and pepper


Cut red pepper into slices, toss with 3 Tbls olive oil and salt and pepper. Roast in a glass dish or baking pan at 350 degrees for about 30 min or until edges are just beginning to crisp and turn black. Place peppers, cheese and milk into a food processor and blend. Sauce will be creamy but still slightly chunky with red pepper pieces.


Assembling the waffles:

Place peppers in the oven and proceed with making waffles. Waffles can always be reheated when ready to stuff. I like to toast them in the oven right before stuffing. Once waffles are made, prepare veggies and set aside until ready to saute for the scramble. Make sure to wash the leeks after chopping to ensure the sediment is removed. When peppers are ready, make the red pepper sauce and set aside. Now you’re ready to finish the scramble and stuff some waffles! Cut waffles in half stuffing them with a generous amount of filling and top with creamy red pepper sauce. This stuffed waffle is perfect for breakfast or dinner! Who says waffle have to be sweet? Don’t just eat ’em. Stuff ’em. Enjoy!
